Per tenir un bon <strong>obrador de gelateria<\/strong> en necessitar\u00e0s una <strong>maquin\u00e0ria molt espec\u00edfica<\/strong> i que en general no \u00e9s gaire econ\u00f2mica. Aix\u00f2 s\u00ed: s?amortitza en poc temps i garanteix que l?elaboraci\u00f3 del producte sigui impecable. Necessitar\u00e0s, idealment, una <strong>pasteuritzadora<\/strong>, una <strong>mantecadora<\/strong> i un <strong>armari<\/strong>, <strong>c\u00e0mera<\/strong>, qualsevol <strong>element de conservaci\u00f3<\/strong> a temperatura negativa per\u00f2 que treballi a -14\u00baC -16\u00baC, a menys temperatura el gelat artesanal cristal\u00b7litza i es fa malb\u00e9, o almenys perd qualitat. A m\u00e9s, necessitarem un <strong>punt de rentat<\/strong> per mantenir la m\u00e0xima <strong>higiene de cubetes i utensilis<\/strong> que utilitzem. Aquests serien els quatre elements imprescindibles per dur a terme i mantenir el gelat, per\u00f2 generalment es complementa el negoci amb un punt de venda, que en necessitar\u00e0 almenys una <strong>vitrina de gelats<\/strong>, i que es pot complementar amb una <strong>m\u00e0quina de cons<\/strong>, una <strong>crepera<\/strong>, una<strong> gofrera<\/strong>, potser una <strong>xocolatera<\/strong> per decorar el gelat, una <strong>vitrina de toppings<\/strong>. Tot i que hi ha m\u00e0quines que tenen ambdues funcions, en grans produccions \u00e9s millor tenir cada m\u00e0quina per a cada prop\u00f2sit, perqu\u00e8 permet <strong>major producci\u00f3<\/strong> ia <strong>menys temps<\/strong>. El gelat artesanal \u201coriginal\u201d \u00e9s el que s&#039;elabora amb base de llet o crema de llet i sucre, i eventualment amb rovell d&#039;ou. Amb la <strong>pasteuritzadora<\/strong>, elevem la <strong>temperatura<\/strong> per sobre dels<strong> 65 \u00baC<\/strong> durant el temps necessari per, com el seu nom indica, <strong>pasteuritzar<\/strong> la barreja de llet, i eliminar qualsevol possibilitat de <strong>bacteris<\/strong>. En canvi, la <strong>mantecadora<\/strong> rep aquesta barreja per<strong> baixar la temperatura<\/strong> y<strong> crear el gelat<\/strong>. Normalment, al pas de la mantecadora \u00e9s quan afegim els<strong> ingredients<\/strong> que definiran de qu\u00e8 \u00e9s el gelat: de xocolata, de vainilla, de maduixa, del que sigui. La mantecadora barreja la base del gelat pasteuritzada i congela les parets de la m\u00e0quina, raspa aquesta barreja i la va \u201cbatent\u201d de manera que en queda una <strong>barreja uniforme<\/strong>. La caracter\u00edstica principal \u00e9s que amb el moviment constant es congela gradualment i es <strong>evita la cristal\u00b7litzaci\u00f3<\/strong> de la barreja. Les bases en aquest cas s\u00f3n llets vegetals com a beguda de soja, de nous, de civada o la reconeguda <\/span><strong style=\"background-color: var(--nv-site-bg); color: var(--nv-text-color); letter-spacing: var(--bodyletterspacing); text-transform: var(--bodytexttransform);\">llet de coco<\/strong><span style=\"background-color: var(--nv-site-bg); color: var(--nv-text-color); font-weight: var(--bodyfontweight); letter-spacing: var(--bodyletterspacing); text-transform: var(--bodytexttransform);\">, especialment adequada perqu\u00e8 <\/span><strong style=\"background-color: var(--nv-site-bg); color: var(--nv-text-color); letter-spacing: var(--bodyletterspacing); text-transform: var(--bodytexttransform);\">no cristal\u00b7litza<\/strong><span style=\"background-color: var(--nv-site-bg); color: var(--nv-text-color); font-weight: var(--bodyfontweight); letter-spacing: var(--bodyletterspacing); text-transform: var(--bodytexttransform);\"> i t\u00e9 una base greixosa molt apreciada. El proc\u00e9s \u00e9s similar, per\u00f2 en aquest cas amb la <strong>mantecadora<\/strong> ser\u00e0 <strong>suficient<\/strong>, ja que la pasteuritzadora la fem servir per prevenir els bacteris que poden contenir els productes lactis, ia m\u00e9s la majoria de llets vegetals ja estan esterilitzades en el moment de la seva comercialitzaci\u00f3.
