Per descomptat, no ens referim a grans produccions industrials com pot ser un \u201cEl Pozo\u201d o \u201cOscar Mayer\u201d, per\u00f2\u2026 sempre, sempre, sempre, recorda: aix\u00ed van comen\u00e7ar!<br \/>En el cas d&#039;un<strong> obrador carni<\/strong>, el m\u00e9s important \u00e9s que treballem amb <strong>producte fresc<\/strong> i que pot corrompre, la carn porta l\u00f2gicament sang, i la sang es fa malb\u00e9, es corromp, i fa malb\u00e9 el producte. Aqu\u00ed \u00e9s molt important que no perdis de vista la <strong>cadena de fred<\/strong> i el <strong>tractament del producte<\/strong> sigui impecable quant a higiene i normes sanit\u00e0ries es refereix. <br \/>En general, els obradors treballen amb <strong>carn processada<\/strong>, \u00e9s a dir, que primer la piquem, realitzem les <strong>barreges<\/strong> pertinents (amb esp\u00e8cies, amb altres ingredients com formatge, ceba, all i julivert, bolets\u2026), formem, envasem o col\u00b7loquem al <strong>env\u00e0s final<\/strong> i conservem, sigui a <strong>temperatura positiva<\/strong> o <strong>congelat<\/strong> en temperatura negativa. Aquesta ens porta a picar la carn, i podem despr\u00e9s <strong>amassar<\/strong>, <strong>barrejar<\/strong> i amassar, <strong>embotir<\/strong>, etc. Picadores de carn, dins de les que podr\u00edem trobar a obradors mitjans, ens podem moure de 150 Kg\/hora fins a uns 1200 kg\/hora. Les m\u00e9s petites s\u00f3n normalment les auxiliars o b\u00e9 les que trobarem a restaurants que vulguin oferir el seu propi combinat. A partir d?uns centenars de quilos per hora, ja s\u00f3n dignes d?un obrador. Les m\u00e9s compactes, encara que molt pesades, s\u00f3n de <strong>sobretaula<\/strong>; les de m\u00e9s alta producci\u00f3 s\u00f3n <strong>m\u00e0quines de terra<\/strong> i fixes. Les <strong>picadores de carn<\/strong> es classifiquen segons la <strong>boca<\/strong>, que pot ser de 12, 22, 32, etc. Els models no corresponen a la mida de la boca, \u00e9s m\u00e9s aviat un indicador de la boca <strong>producci\u00f3<\/strong>. Despr\u00e9s hem de mirar el <strong>tipus de tall<\/strong>, que pot ser doble o triple, <strong>Enterprise o Unger<\/strong>, etc. Com m\u00e9s vegades passa la fulla, m\u00e9s fina queda la carn. Recorda que les <strong>fulles de tall<\/strong> s\u00f3n intercanviables, per tant pots aplicar un tipus de tall a un tipus d&#039;elaboraci\u00f3 i un altre tall a una altra. A m\u00e9s, la <strong>picadora<\/strong> pot ser <strong>refrigerada<\/strong>: cal tenir en compte que el tall i el frec de les fulles genera calor, si vols assegurar-te una <strong>perfecta cadena de fred<\/strong>, ho garantir\u00e0s amb una <strong>picadora de carn refrigerada<\/strong>, en qu\u00e8 el cos i la boca mantenen baixa la temperatura per garantir la no reproducci\u00f3 dels bacteris. Despr\u00e9s trobar\u00edem les <strong>pastadores mescladores de carn<\/strong>. A m\u00e9s d&#039;amassar i barrejar carn, pot tenir altres aplicacions en altres aliments. Les capacitats van de 10-12 kg a uns 200 o m\u00e9s. Venen a tenir com una mena de cuba amb unes aspes que giren en sentit contrari unes respecte a les altres, de manera que la <strong>barreja<\/strong> queda <strong>homog\u00e8nia<\/strong> ia m\u00e9s sense aire, molt important per elaborar embotits. L&#039;embotidora pot ser una <strong>embotidora manual<\/strong> o una <strong>embotidora hidr\u00e0ulica<\/strong>, que \u00e9s l&#039;autom\u00e0tica. Amb la manual col\u00b7loquem 5 o 7 kg de carn, aproximadament, i pressionem mitjan\u00e7ant una maneta. Aquest model \u00e9s molt econ\u00f2mic i resulta ideal per a petites produccions. L&#039;embotidora hidr\u00e0ulica funciona amb connexi\u00f3 el\u00e8ctrica, i les m\u00e9s b\u00e0siques ja parteixen d&#039;uns 20 kg de carn i, per descomptat, el proc\u00e9s \u00e9s molt m\u00e9s r\u00e0pid. El mateix passa amb les <strong>formadores d&#039;hamburgueses<\/strong>: n&#039;hi ha de manuals, en qu\u00e8 col\u00b7loquem la bola de carn i la premsem, i hi ha les autom\u00e0tiques, que arriben a una producci\u00f3 de fins a m\u00e9s de <strong>4 mil hamburgueses per hora<\/strong>. Tot aquest tipus de maquin\u00e0ria d&#039;alta producci\u00f3 t\u00e9 una s\u00e8rie d&#039;accessoris per <strong>optimitzar la producci\u00f3<\/strong> segons cada obrador. Per exemple, en una formadora d&#039;hamburgueses autom\u00e0tica us podem afegir la <strong>cinta transportadora<\/strong>, que ens dispensa autom\u00e0ticament l&#039;hamburguesa, tamb\u00e9 el dip\u00f2sit del paper perqu\u00e8 ja surti muntada, etc. En un obrador carni tamb\u00e9 resultar\u00e0 de gran ajuda una <strong>serra d&#039;ossos i congelats<\/strong>. Aquestes es classifiquen per la <strong>mesura de la cinta<\/strong>, acostuma a anar dels 150 cm als 2 metres. Segons el tipus de cinta, ser\u00e0 adequada per tallar <strong>ossos o congelats<\/strong>. En un obrador de carn \u00e9s f\u00e0cil tenir <strong>grans peces<\/strong> de congelats, aix\u00ed com grans peces de pinyol que cal tallar.
