Aquest sistema permet conservar les propietats nutricionals, millorar-ne la planificaci\u00f3 i evitar la p\u00e8rdua de pes o volum de l&#039;aliment, ja que no es produeix evaporaci\u00f3 ni dessecaci\u00f3. A m\u00e9s, simplifica l&#039;organitzaci\u00f3 de la feina, facilita el servei i perllonga la vida \u00fatil del producte en eliminar l&#039;oxigen de i cuinar-lo envoltat d&#039;un medi aqu\u00f3s (aigua o vapor) a baixa temperatura, de manera uniforme i constant. Per aix\u00f2 es poden fer servir diferents m\u00e8todes. Els m\u00e9s habituals s\u00f3n els cocedores sous vide, disponibles en dues versions: els term\u00f2stats agitadors per immersi\u00f3, tamb\u00e9 coneguts com roner, i els cocedores est\u00e0tics, que s\u00f3n cubes amb control de temperatura. Els roners s\u00f3n port\u00e0tils i es poden utilitzar en cubetes, olles o recipients grans de fins a 50 litres de capacitat. Els cocedors de cuba, en canvi, no tenen mobilitat i surten d&#039;uns 9 litres i poden arribar fins als 56 litres. Tots dos s\u00f3n molt precisos, amb marges d&#039;oscil\u00b7laci\u00f3 de \u00b10,01 \u00baC. Un dels grans avantatges de la cocci\u00f3 sous vide \u00e9s la racionalitzaci\u00f3 del treball. Permet preparar elaboracions fora dels pics de servei, mantenir les racions llestes per al passi i estandarditzar els processos, garantint resultats consistents. S\u00f3n eines precises, f\u00e0cils de programar i segures, ideals tant per a cuines professionals com per a c\u00e0terings o col\u00b7lectivitats que necessiten mantenir un alt nivell de qualitat amb un control absolut del temps i la temperatura. Un producte es considera pasteuritzat quan ha estat almenys 30 minuts a 65 \u00baC al cor. \u00c9s important respectar els temps i les temperatures tant de cocci\u00f3 com d&#039;abatiment i regeneraci\u00f3, ja que els bacteris proliferen en el seu rang de confort t\u00e8rmic.
