cocinarlo rodeado de un medio acuoso (agua o vapor) a baja temperatura, de forma uniforme y constante. Para ello pueden usarse distintos m\u00e9todos. Los m\u00e1s habituales son los cocedores sous vide, disponibles en dos versiones: los termostatos agitadores por inmersi\u00f3n, tambi\u00e9n conocidos como roner, y los cocedores est\u00e1ticos, que son cubas con control de temperatura. Los roner son port\u00e1tiles y se pueden utilizar en cubetas, ollas o recipientes grandes de hasta 50 litros de capacidad. Los cocedores de cuba, en cambio, carecen de movilidad y parten de unos 9 litros y pueden llegar hasta los 56 litros. Ambos son muy precisos, con m\u00e1rgenes de oscilaci\u00f3n de \u00b10,01 \u00baC. Una de las grandes ventajas de la cocci\u00f3n sous vide es la racionalizaci\u00f3n del trabajo. Permite preparar elaboraciones fuera de los picos de servicio, mantener las raciones listas para el pase y estandarizar los procesos, garantizando resultados consistentes. Son herramientas precisas, f\u00e1ciles de programar y seguras, ideales tanto para cocinas profesionales como para caterings o colectividades que necesitan mantener un alto nivel de calidad con un control absoluto del tiempo y la temperatura. Un producto se considera pasteurizado cuando ha permanecido al menos 30 minutos a 65 \u00baC en el coraz\u00f3n. Es importante respetar los tiempos y temperaturas tanto de cocci\u00f3n como de abatimiento y regeneraci\u00f3n, ya que las bacterias proliferan en su rango de confort t\u00e9rmico. En realidad, la clave est\u00e1 en jugar con tiempo y temperatura: cuanto m\u00e1s alta la temperatura, menos tiempo de cocci\u00f3n ser\u00e1 necesario. En este \u00faltimo caso, el centro del huevo no llega a alcanzar los 65 \u00baC, por lo que la yema sigue cremosa. Tambi\u00e9n influye el tama\u00f1o y la frescura del huevo, por lo que conviene ajustar los tiempos hasta lograr el punto deseado.
